1 (16 oz) package Jennie-O Lean Ground Turkey
1 cup La Victoria Thick N Chunky Salsa divided or Chi-Chi’s Medium Thick & Chunky Salsa, Divided
1 T – Olive Oil
1/2 t – salt and freshly ground pepper
1/4 c – plain bread crumbs
4 slices jalapeno jack cheese
1/4 c – mayonnaise
1 c – baby spinach leaves
1/4 c sun-dried tomatoes
1/2 red onion, thinly sliced
4 hamburger buns
Combine ground turkey, 1/2 c salsa, olive oil, salt, peer and bread crumbs in a small bowl. Form into 8 1/2 inch thick patties. Fold cheese slices into quarters to create 4 stacks. Place cheese in center of 4 patties. Cover with remaining patties; crimp edges closed. Spray skillet with nonstick cooking spray. Add burger patties to preheated )med-high) skillet. Cook 14-16 minutes, flipping 3 times. Always cook to well-done, 165 degree F. as measured by a meat thermometer.
Combine remaining salsa and may in a small bowl. Spread salsa mayo on top and bottom of each bun, layer with spinach, burger, sun dried tomatoes and red onion slices.
Makes 4 servings.
